He observed perfect dental arches, minimal tooth decay, high immunity to tuberculosis, and overall excellent health. Those cultures ate much more meat than initially anticipated. Organ meats and muscle meats were the staples. He contrasted this to Western cultures, where flour, sugar, and modern processed vegetable fats dominate the nutrition pyramid. This diet caused nutritional deficiencies, and with that also came tooth decay, malformed jaws that overcrowded teeth, dental caries, arthritis, and poor immunity to chronic and acute diseases such as heart disease, respiratory infections, influenza, etc.
The false narrative that saturated fat is terrible, that vegetables and highly processed foods are beneficial, and that any animal-related foods cause disease is exactly what has led to the steady decline in our health.
